Christmas Ham
Well ... wasn't able to find a full fresh ham to smoke, and I promised Mom smoked Ham for Christmas. I thought about a b$tt, but, it's just not the same.
Finally found a Snake River PIT Ham. It was $54 for a 9 pound bone in ham. I had no idea what a PIT ham was, but I was desperate. Turns out, it's a ham that a butcher carefully removes from the bone and trims some of the internal fat, then he puts the meat back around the bone and tightly nets it. PIT stands for "Partially Internally Trimmed"
Anyway, I brined it, did some cross hatching to help render the fat. I then put it on the smoker on low smoke for about 8 hours. It looked like it was smoke cured (Shhhhhh ... don't tell Mom). There was very little shrinkage, except near the top were the bone was. It was really good. After we had our dinner, I trimmed the meat where the butcher had and was able to get 3 chunks of meat large enough for a meal and the bone still had enough meat to make Navy beans. Froze the 4 chucks for a later day.
To round out the meal, I baked sweet potatoes and made the requisite green bean casserole with the fried onions on top. Cheated on the rolls, just made Pillsbury Crescents. For desert, Marie Calendar and I made a razzle berry pie.
All in all, decent Christmas dinner. Sorry ... didn't take a pic of the full plates, was too busy stuffing my face ...

It was, and Mom never suspected it wasn't a "Fresh Ham". The skin/fat was crispy and the meat was juicy and tender.Looks really Good Alan.............

Aww Sully, now you're hurting me, that's one of the things from the ocean I love but can't eat, something about a certain enzyme in shrimp that makes me break out in very large hives. It sure looks good though.

We made some hot peppers in oil today, Hungarian Wax, jalapeno, red chiles and serrano. They went well with the Misses whipping up some cheese ravioli and meatballs.
