Still without a smoker
I still haven't decided how to replace my smoker. I'm kind leaning towards a pellet grill/roaster/smoker. In the meantime, I continue to experiment with the Hibachi. Today I took a rack of baby backs, brined them after removing the silver skin. Did a light rub with a touch of apple cider vinegar, brown sugar, salt, pepper, little cumin and a touch of paprika. Sealed then in an oven pan with foil, baked at 225* for 3 hours. Finished then on the Hibachi with my grand father's bbq mop sauce. Except for the inability to control flare ups, they came out really good. The flare ups charred the sauce a tad, but it made for some good bark. The meat pulled back from the bone and was fall apart tender and very juicy.
I present your with my latest attempt sans smoke.
Surgar and fire not a good combination . I leave it in the pan after I mop for about 15 minutes uncovered to half hour indirect low heat

Fuzzy, check out the Akorn Grills at Lowes. They are just like the Big Green Egg but half the price. Also try this, instead of Apple Cider Vinegar, just use Apple Juice. Gives it a sweeter taste. Oh, good looking bark

I'll check em out ... I like the apple cider vinegar because it helps to tenderize and keep it juicy ...
