Body is about 80% built, gauges and key switch installed in m/c gas tank. New tank mounted in back. My question is this what tire width is most people running? I've been considering running a 60 wide on 10" chevrolet rim. Any and all help will be greatly appreciated.

Good as long as you don't hydroplane in the rain, a 24575R15 is good

What would be the pros and cons of running a 60 series to a 75 series width tire?? Other than price. As soon as i can figure out how to post pics, they'll be here. Wife made a bunch last night.

Looks are there major determining factor. Hydroplaning is the trade-off. Also tire circumference will effect your gearing just like a sprocket on a bike.

In afterthought, probably gonna go with a 245/75r15 or a 235/75r15. Relatively easy to come by anywhere.

The one major factor that is a common problem on VW trikes is that the tallest differential gearing available is 3.89. That actually gears a VW trike too low, or in other terms it runs out of engine speed at too low MPH. The choice of a 75 series tire over the 60 series will result in about a 5% overall gearing increase - so you can cruise at a higher highway speed more comfortably. A good choice not often specifically addressed by VW trike fabricators.
