I am going to assume you are mixing units of measure.
So it is ground .030 inch under size. Then get .030 under size bearings.
If you are looking at metric bearings then .030 inch is roughly .75 mm
Actual .030 inch is .762 mm
.75mm is .0295 inch
If you have a crank that has been turned .30 under, I'd scrap it! You can get decent standard sized counterweighted crankshafts for just a touch over a 100 bill.

If it was a .10/.10 cut on the crank I'd use it, but .30 under is getting fairly deep on the stock VW journal size.
I'm with Stinger. How much is your case bored? VW bearing sets have ID to compensate for journal grinding and OD dimensions to compensate for align boring of the aluminum case bearing saddles. You might also consider spending $30.00 more and getting a counterweighted crank. Aircooled.net has a SCAT unit for $169.99. It will make the engine cases last longer and the engine run smoother.
