Caught the Lone Star, the S.A. River, the Alamo, maybe a boot, the whole shape looks like a short-horn steer, the heart, a sombrero, maybe a purple onion, .... tell me what I missed.

Great eye...I came up with the same, with the addition of the sun and moon (left and right of the heart shape)
A margarita glass, the purple onion I think maybe a guitar and the crown above the Alamo , also thinking that it's a heart with wings?
The whole abstract thing made it fun to figure it out.
Odd thing is this wasn't the poster originally picked. :Shrug: guess they caught flack for the other with the Spanish lady dancer.
Interesting...actually the only official poster I found on a google search was the Spanish lady dancer for 2017 - never saw this one anywhere. I like this colorful, abstract poster better. Thanks for posting it. ... pun intended. :)
