Ready for the smoker, a combination of greek and turkish seasoning for the rub.
2 hours at 235 using cherry wood, internal temp is 150
Sliced up and ready to plate, nice and juicy after letting it sit for 10 minutes covered in foil
Some red taters and green beans in garlic parmesan sauce, watermelon for desert.

I'm trying something new today ... in honor of our troops ... Okay ... I lie ... it's in honor of my tummy.
I got a rack of ribs. I rubbed them last night with brown sugar and kosher salt. I wrapped the rack in plastic wrap and put it in the frig. It is suppose to act like brine, but, be a better method for ribs.
I'll be cooking them on the pellet smoker with apple wood pellets and spritzing them regularly with apple cider to keep them moist.

As promised ... here's the pics ... must be noted that mom's favorite side with anything smoked is fried taters and I'v learned not too argue

All in all, I think I like the salt and brown sugar method ... I did 1/3 cup each of kosher salt and brown sugar, rubbed it all over the ribs after removing the silver skin, then wrapped tightly in plastic wrap and refrigerate over night. Before putting them on the smoker, wipe all the excess, not much, and rub with a little garlic powder and pepper. Really juicy and really tender. This rack had lots of meat.
I smoke them at 175* until they reach 160* internally as read by a remote thermometer (about 6 hours). I spritz them about every hour with a 50/50 mix of apple juice and apple cider vinegar. Then spritz them really good and wrap them tightly in foil and finish at 225* until the internal temp is 205* (about another 4-5 hours).
Cooking times are dependent on ambient temp and meat thickness. I use the same method for a butt, but, the times are much longer (like 20-22 hours total).
Pretty sure they'd get cold ... hehehe

cooked 2 alligators on the smoker last weekend . stuffed with onion, celery, and sausage. had crawfish bread , and tater salad. my 60th birthday bash.
Smoked chuck roast with the wife's cole slaw and taters for supper tonight! YUM!!!
