Not to be rude but its called East Texas, Eastern well it sounds eastern and that sounds a bit too Yankee for them. Those in East Texas that is.
Lots of great places in east Texas, then there's deep east Texas, see what i mean. ???
Enjoy the ride they even have trees out there. Unlike other parts of Texas.
Couple of suggestions: Visit the Texas Highways website. They have a section listing events all over the state by region and city. You may find an event to visit. Also, there's a site named Motorcycle Events in Texas that could suggest something.
We called it "Western" Kansas when I live there for 30 plus years,, so hard habit to break,,,, so i guess I put a "ern" on everything,,LOL
Ride the Hill Country in Texas. Interesting roads, tour the LBJ ranch located between Johnson City and Fredericksburg. It isn't far East Texas, but it is nice country.
Ride Texas magazine has some great road trip info. Sorry forgot to say that the first time.
Back in the 60s i used to go to Caldwell Ks, all the time, Model As were stacked as high as a house kinda like a pyramid of cars, and Caldwell had an old junk yard down town that had been closed for decades i think.
Henry Sinclair Drago was a western writer and wrote about Caldwell in one of his Westerns, said it was a bad ass cattle town in its day.
Best to ya hope ya find what ya need and ride safe.
You will probably want to start in the Jefferson area. Jefferson is a nice clean MC friendly town. Lots to see and do around there. Good time of year for a boat tour of Caddo Lake https://en.wikipedia.org/wiki/Caddo_Lake_State_Park. Lots of other stuff to do in the area. The Texas Hill Country is another 400 miles west.
Have a great trip!

I was in the habit of following a friend, now deceased, so I don't know the roads but I can recommend the Tyler Rose Garden in Tyler, East Texas Burger Co. in Mineola and Country Tavern Barbecue in Kilgore.
Ride safe and have fun.
