Electronic Throttle Question

I'd love to buy a new bike and do something cool with it. My problem is that I am missing my right arm. I've searched and searched about switching a newer electronic throttle to the left side without any luck. Can this be done without having to roll it forward and keeping the big bulky assembly?

If not, how hard or even possible is it to get rid of that crappy electronic throttle for good old fashioned cables?
