Without actually measuring the fluid in oz a good guideline for a visual check would be. With the Trike level and the cover off so you can see the clutch assembly. The fluid level should be just over/at the bottom of the clutch. See approxment level line drawn on the pic below.

(Note)

To much of an oil level over the clutch can also cause issues.

I really would suggest filling it from empty with 38oz of oil and taking note of where the oil level is on your Trike for future eye or visual oil level checks.

As you say too much fluid will cause the clutch to drag and shifting is hard.ThumbUp

With my old tour glide I have the oil level at the bottom of the clutch plates, a might under where you show your line but then again mine is old school.
 
I have put around 1,000 miles on it since I replaced the primary fluid with 38 oz..
It made a big difference. I have not encountered any noises, including the knocking.
The knocking when taking off when cold is gone with not clutch noise. I have noticed the clutch is better than it was.
I can now hit it at 20mph without using the clutch and front end lifts off the ground. It is holding better. If you are concerned about over filling cut it to 37 oz and use the line on the oil instead of the orphis (spelling) that is the in the center of any fluid and looks like a bowl. That is the proper way of being correct. so if you want it dead on you use the orphis that will be dead on.
When bottling drinks ever 100th bottle the orphis has to be checked That is how I know about it.
The line on the oil is about 1/4 to 1/2 oz less as using the orphis depending on the container for measuring. The bigger the mouth the bigger the orphis.
