Lanny, a similar discussion was posted a week or so ago. One of the posts suggested changing rear tire size instead of the actual gear ratio. For a couple reasons that is not a bad idea. First it's a lot easier to do and also undo if you don't like the result and secondly you can tune it closer to what you are looking for.

The other thread to exactly the opposite of what you are wanting to achieve. The OP was wanting my get up and go off the line and was willing to suffer high end speed and gas mileage.
Here are a couple sites that might help you tire reconfiguration if you choose that route. http://www.csgnetwork.com/tiresizescalc.html http://www.1010tires.com/Tools/Tire-Size-Calculator

Also remember if you change the ratio or even the tire diameter youre doing it across all of your gears. And the few mph you might get out of your tire diameter may not be worth spending the money.

Putting on taller tires will maybe gain you 2 MPG. But as stated it I a gross the board. You take off will be effected. It will be like 1/2 between 1st and 2nd gear. If you pull a trailer you will pull in 4 th more than 5th. B T D. I fooled with gears with my 56 Chevy. Not because of gas mileage, because drag racing I kept blowing the rear end. Well when the pick and pull ( junk yards ) ran out of 3:55 I used 3:70 then 4:11 in the end I was using 3:08. And burning out clutches.

Gas mileage when up and down maybe 3 to 4 Mpg over that whole range.

Also putting on taller tires will make it interesting getting the wheels off if you do your own work. I have Lehmans 16 in billet wheels with 65 series tires and I cant imagine going taller with those wheel wells.
