Whats for supper?

Just doctored, branded and cut 56 calves this past weekend so looks like it's calf fries and Shiner dark tomorrow night !!!!

Bacon Spam

ok here we go; the housekeeper wanted meatloaf, didn’t have any pork to mix with the chopmeat, so I had a expired can of spam, not bad only 1yr out of date , after the big lump came out of the can, I diced it up with a carrot, onion, celery and fried it all together untill the spam was outside crispy. After the mess cooled mixed it with the chopmeat, 2 eggs, panco and a lil milk. Shaped it into a loaf vessel and toped with bacon slices. 400* till 160 inside.

Was prety dam good!! Don’t add any salt as it turned out not salty at all. Was really surprised . 📞
 
According to the housekeeper, only thing missing is the cinnamon apple sauce? Btw, that’s a meal for two , non marinated Smithfield’s are the best :clapping:
 
Fuzzy, you got me drooling, those beans look amazing, i might have to try them that way. Did they go in the smoker too?
 
No, the beans need to be baked to get the bacon to render the fat, that's what makes it. Cutting the bacon in squares like that is a pain, but, if you just lay it across the top, it's hard to serve and you need to eat the bacon by itself. I should also note, there is 6 brats, skinned, chopped up, and browned with onions mixed into the beans. Yummy.

That time of the year. Got all the calves (48 head) doctored, de-horned, branded and cut. So supper tonight is calf fries, corn on the cob and ranch beans w/fresh chopped jalapenos and green onions..
